I am looking to replace a digilock on a panic bar door. However I am interested in one that I am able to deadlock at night once everyone is out of the building. Is there such a thing?

You can use the CL1 outside access device mechanical keypad outside (compatible with an Exidor push pad or push bar inside).  This cannot be deadlocked, but it may be possible to add an additional separate deadlock to the door, but you would need to pass this with your local fire officer who will decide based on the usage of the building/door.
